Natural Food Preservative E-Polylysine 

epsilon-Poly-L-lysine (e-PL) is a homo-poly-amino acid characterized by the peptide bond between the α-carboxyl and ε-amino groups of 25-35 L-lysine monomers.

It's praised as the "nutritional preservative" by FDA and most respected by over 50 countries.

epsilon-PL shows a wide range of antimicrobial activity and is stable at high temperatures and under both acidic and alkaline conditions.(pH 2.0-9.0).
The cationic nature of e-PL allows it to inhibit the formation of cell membranes of a wide range of microbes, including yeasts, fungi, G+ and G- bacteria.

The mechanism for e-PL antimicrobial activity is its electrostatic adsorption onto the cell surface of microorganisms leading to stripping of the outer membrane and abnormal distribution of cytoplasm.

Due to this antimicrobial activity, epsilon-PL is now industrially produced as a food additive by a fermentation process using Streptomyces albulus.
